BBQ Stuff
Kamado Joe
The Kamado Joe is my go-to smoker, barbecue and grill. I can sear steaks at 1,000°F or cook a brisket for 12 hours at 225°F.
Cast Iron Grate
Cast iron grates are much better than the stainless steel grates that come with the Kamado Joe. There are not expensive, but you will need two of them.
Griddle Plate
A half-moon griddle plate fits inside the Kamado Joe and is great for making smash burgers.
Griddle Plate
A rectangular griddle plat will fit inside most gas ranges and Traeger grills. It does NOT fit inside a Kamado Joe.
Burger Press
The burger press has a recessed area and a raised lip. It works great for forming burger patties.
Grill Press
A flat bottomed grill press works well for holding down bacon in a skillet.
Long Spatula
A long, 17" spatula is what you need to get a burger off the grill during a flare-up.
Grill Gloves
Grease-resistant gloves work well for handling a chicken coming off a rotisserie.
Large Burger Spatula
The perfect spatula for smash burgers. This thing is a beast. It is the heaviest spatula I have ever owned. Because of the short handle, I only recommend it for a flat top like a Blackstone griddle.
Infrared Thermometer
This thermometer is perfect for checking the temperature of my griddle, waffle iron, wok and discada. This a must-have tool in my kitchen.
Fireboard Temp Control
The Fireboard Drive is the ONLY device that I will use to control the temperature in a Big Green Egg or Kamado Joe. It's dead-on accurate and just works.
Meater Thermometer
The Meater provides an easy way to monitor the internal temperature of a large roast like a pork shoulder, brisket or rib roast. It can ONLY be used over indirect heat. You don't need this if you own a Fireboard.

Wagyu Beef Tallow
This is the beef tallow that I use in my recipes.
Round Parchment Paper
Parchment paper rounds are great for use with a burger press or a tortilla press. I use both 6" and 8".
Lee's Corn Cutter
This awesome little tool was invented in 1939 and works great. It's what I used to make creamed corn without heavy cream.
Chef's Knife
I own a lot of chef's knives and this is my favorite. I like the weight and balance of the knife and it holds a sharp edge for a long time. It's also nice to look at.
