Tex-Mex Refried Beans

A staple in many households, authentic Mexican refried beans are simple, yet rich and satisfying. The problem with most canned refried beans is that they are boring and lack flavor. In this recipe, we will show you how to modify canned beans to create delicious refried beans full of flavor. Their velvety texture, coupled with hints of cumin, coriander and garlic, creates a dish that symbolizes Mexican comfort food. It's easy to make canned refried beans a whole lot better.

The Tex-Mex refried beans are great as a side dish or just as a dip with chips.

Ingredients

  • Olive oil
  • Yellow onion
  • Jalapeno
  • Garlic cloves
  • Ground cumin
  • Ground coriander
  • Chili powder
  • Mexican oregano
  • Black pepper
  • Kosher salt
  • Refried beans
  • Water
  • Queso Fresco cheese

Instructions

These beans are easy to make. First, stem, seed and finely chop the jalapeno. In a large skillet, sauté the chopped onions over medium heat until softklened. Add the chopped jalapeno and chopped garlic and sauté for another minute or two. Stir in the cumin, coriander, chili powder, oregano, black pepper and salt.

Add the beans and ⅓ cup of water. Stir well. The beans should appear slightly thin. This will help the spices to blend with the beans. Add more water if necessary.

Simmer on low heat for 20 minutes, stirring frequently. Top with Queso Fresco and serve.

Variations

If you like your beans spicy, just add another jalapeno pepper.

Equipment

No special equipment was used to make these beans.

Storage

Store leftover refried beans in an airtight container in the refrigerator for up to 3 days.

Top Tip

This recipe uses only ¼ teaspoon of Mexican oregano because a little goes a long way. Mexican oregano is very fragrant and too much can overpower the dish.

Ingredients
  

  • 1 tbs olive oil
  • ½ yellow onion diced

Notes

Refried beans out of the can are just not that exciting.  This is an easy way to add a ton of flavor without a lot of effort.
