Here’s a great way to enjoy a great burger with amazing flavor and a unique twist. This recipe features juicy brisket patties, with a perfect meat-to-fat ratio, grilled to perfection and served on crispy Texas garlic toast. Ingredients

Burgers

  • Beef Brisket
  • Garlic cloves
  • Texas toast
  • American cheese
  • Sriracha
  • Mayonnaise

Instructions

For the most flavorful burger, use a combination of meat from both the brisket flat and point. Trim any excess fat from the brisket, then cut it into chunks suitable for your meat grinder. For the best texture, grind the brisket twice using a medium-coarse grinder plate.

Weigh out .5-pound portions and form each into a ball. Press each ball into a 6” diameter patty ½” think. Form the patties on individual pieces of parchment paper to make getting them onto the grill easier.

Mix the sriracha mayo ingredients together in a small bowl. Adjust the level of sriracha to taste.

Preheat your grill to medium-high heat (400-450°F). Ensure the grill grates are clean and lightly coated with cooking spray to prevent sticking.

Mix the melted butter and garlic in a small bowl. Use a brush to apply the garlic butter to both sides of each piece of bread. Arrange the pieces of bread, two at a time and at an angle (for nice grill marks) on the grill grate directly over hot coals. Cook for 20-30 seconds then flip and cook the other side for another 20-30 seconds per side. Watch closely to avoid burning. Remove the bread and set aside.

Place the brisket burger patties on the grill and cook for about 3 minutes. Flip the burgers over, add two pieces of cheese and turn off the grill. Close the lid and let the cheese melt (2-3 minutes). Cook to an internal temperature of 140°F for medium.

Spread a layer of sriracha mayo on the bottom slice of each piece of Texas toast. Place a cheesy brisket patty on top of the mayo-covered toast. Spread a little more sriracha mayo on the top slice of Texas toast and place it on top of the burger. Serve immediately.

Grilled brisket burgers pair wonderfully with crispy fries, baked beans, fresh coleslaw and potato salad.

Variations

A ground beef blend of chuck roast and top sirloin also makes an excellent burger. For a real treat, top your brisket cheeseburger with a crisp slice of bacon and replace the sriracha mayo with your favorite BBQ sauce.

Add lettuce, tomato slices, pickles, and optional red onions for added crunch and flavor.

Top Tip

Choose a brisket with a good fat content for the juiciest and best-tasting burgers. The ratio of fat to meat is crucial for achieving the perfect flavor and texture.

Grinding your own brisket gives you control over the meat-to-fat ratio and results in a superior burger.

For the best burger experience, avoid overcooking the patties and let them rest for a few minutes before assembling to let the juices redistribute.

Texas Toast Brisket Burgers Recipe

Instead of the usual hamburger bun, try making burgers on Texas toast. Brushed with butter and garlic and then grilled, this is a burger Texas-style.

Ingredients
  

Burger Patties

  • 2 lb ground brisket
  • 8 slices American cheese
  • kosher salt to taste
  • freshly ground black pepper to taste

Burger Sauce

  • ½ cup mayonnaise
  • 1 tbs sriracha
  • kosher salt to taste
  • freshly ground black pepper to taste

Texas Toast

  • 8 slices white bread cut 1" thick
  • ½ cup salted butter melted
  • 3 cloves garlic pressed

Instructions
 

  • Preheat you barbecue grill to 400-450°F over direct heat.
  • Mix the melted butter and garlic in a small bowl. Use a brush to apply the garlic butter to both sides of each piece of bread. Arrange the pieces of bread, two at at time, at an angle (for nice grill marks) on the grill grate directly over hot coals. Cook for 20-30 seconds then flip and cook the other side for another 20-30 seconds per side. Remove the bread and set aside.
  • Mix the burger sauce ingredients in a small bowl.
  • Divide the ground beef into 4 patties, each weighing ½ pound. Press the patties flat to about ½" thick and 6" wide using a burger press. Grill the burgers over direct heat for 3 minutes. Flip them over, cover each patty with 2 pieces of cheese, and turn off the grill. Cook for another 2 minutes.
  • Spread the burger sauce on one side of each piece of toast. Assemble the burgers and enjoy.
